CIEH Level 3 Award in Supervising Food Safety in Catering is a 3 and a half day course, running on the 7th, 14th, 20th & 27th March 2012.
Courses will be run throughout the year. Dates to be confirmed.
Certificates will be despatched up to 6 weeks* following the course.
The Level 3 course is aimed at those who are supervising other staff within a food business - whether that be catering, manufacturing or food retailing. We would recommend that all food premises should have at least one person trained to Level 3 - particularly if they are in charge of other staff and are responsible for the training of those staff.
On completing this course candidates will understand the:
• Terminology used in respect of supervising food safety procedures
• Supervisor’s role in ensuring compliance with UK and EU food safety legislation
• Concept of contamination and the risks it imposes on food safety
• Role temperature plays in the control of food safety
• Importance of good workplace and equipment design to ensure food safety
• Importance of supervising high standards of cleanliness in food premises
• Importance of good pest control practice
• Need for high standards of personal hygiene
• Importance of being able to contribute to staff training
• Principles of the HACCP system and how a supervisor can contribute to the implementation of a food safety management system
• Implementation of a food safety management system, such as the FSA’s Safer Food, Better Business
